bake-a-thon.

I spent most of today baking. This was all in preparation for the now annual pre-Thanksgiving Thanksgiving with the crew. I have included below recipes for the pumpkin brownies and oreo brownies. Happy baking!

Pumpkin Chocolate Chip Bars:

Ingredients:
2 cups flour
1 tablespoon pumpkin-pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup unsalted butter
1 1/4 cups granulated sugar
1 large egg
2 teaspoons vanilla extract
1 cup canned pumpkin puree
1 package semisweet chocolate chips

1. In a medium bowl, whisk together flour, pumpkin-pie spice and baking soda. 
2. Cream butter and sugar until smooth. Beat in egg and vanilla. Add pumpkin puree and mix well. Mix in dry ingredients. Fold in chocolate chips.
3. Bake bars 35-40 minutes at 350 degrees in a 9x13 pan. 
4. Cool bars completely and enjoy. 

Oreo Brownies

Ingredients:
1 box of brownie mix
egg and oil as called for
1/2 cup of cookies and cream ice cream
1/4 cup of hot fudge topping

1. Combine brownie mix, eggs and oil as directed on the brownie mix box. But do not add water. 
2. Add ice cream and hot fudge to the batter. 
3. Pour half of the brownie batter into the pan (8x8), layer with oreos then cover with the remaining batter. 
4. Bake for 40-50 minutes as directed on the box.
